Bacon wrapped shrimp

For what I thought was going to be an awful day- turned out to be O.K. Any day that starts with the Dentist is awful one in my eye’s- but I tried to see past that… all the way to Starbucks to grab a Soy Latte ;)


After my car didn’t start yesterday I decided to bring it in for a check up and new battery today. Yeah- well if it were only that easy. A few months ago our street at the bottom of the hill was being worked on FOR-EVER. Every time you would drive over it you could just hear it messing up the alignment on your wheels. I called the City and spoke with multiple people, and left numerous messages asking about when it would be done, etc..

O.K it’s done but the damage is done too. Dropped a pretty penny to get my car fixed and re-aligned. Looking at the alignment and both front control arms compared to July, Nissan said it was actually unsafe. Thank you to the lovely city of Worcester for taking months and months to fix our road. That being said- there will be a claim put in for that one. Now if I only had all my calls and voicemails on a recording… damnit.

Tonight’s dinner I went for a spin off of these. Swapping out the chicken for shrimp. I cut up the bacon into tiny strips so it would fit around the shrimp. Just broil in a preheated oven in a HOT skillet for a 6-8 minutes until shrimp is cooked through and bacon is crispy.



T-minus 57 day’s until vacation… that means trainer time. Winter rides are much more enjoyable when you have something to watch other than “just t.v”. It certainly get’s boring after awhile!

I’ve got my trainer here and he’s pushing me pretty hard.


So- Ever heard of Apple T.V.? It’s pretty awesome. All you do is hook it up to your T.V then sign into your wifi. Then you can browse youtube, and a whole bunch of online movies and stuff. We thought it was going to be a pain in the neck to set up- but it really wasn’t! It was super simple. We have just used it for You Tube video’s so far, we love our documentaries! I’m acutally looking forward to riding the trainer just so I can watch the next one… weird?

1, 2, 3.. Paella!



I told you I was going to make it. ;)

We found Chorizo, and saffron at Wegmans, we had all the other ingredients at home, so all I needed was a recipe:

First- marintate the chicken, cover, and refrigerate-

  • 1 T EVOO
  • 1.5  teaspoons paprika
  • 1 t dried oregano
  • S&P to taste
  • ~1/2 pound skinless, boneless chicken breasts, cut into 2 inch pieces

Second- Make saffron rice- Heat EVOO in a large skillet over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 40 minutes. (<– just cook rice according to directions, it may vary)

  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • 1/2 t. crushed red pepper flakes
  • 1 cup uncooked brown rice (**we used brown rice vs. white rice. All the recipes I found called for white rice, but we wanted to try brown)
  • 1/2 pinch saffron threads
  • 1/2 t. parsely
  • 2 cups chicken stock
  • 1 lemon, zested

Third- Cook meat and peppers- Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.1 tablespoon olive oil

  • ~1/2 Spanish onion (white/yellow sweet), chopped
  • ~1/2 red, green, & yellow bell pepper, cut in strips
  • ~1/2 pound chorizo sausage (casing removed and crumbled or sliced thinly)
  • ~1/2 pound shrimp, peeled and deveined

Fourth- mix it all up and enjoy :)


and there’s plenty for leftover’s for tomorrow :)
