Bacon wrapped shrimp

For what I thought was going to be an awful day- turned out to be O.K. Any day that starts with the Dentist is awful one in my eye’s- but I tried to see past that… all the way to Starbucks to grab a Soy Latte ;)


After my car didn’t start yesterday I decided to bring it in for a check up and new battery today. Yeah- well if it were only that easy. A few months ago our street at the bottom of the hill was being worked on FOR-EVER. Every time you would drive over it you could just hear it messing up the alignment on your wheels. I called the City and spoke with multiple people, and left numerous messages asking about when it would be done, etc..

O.K it’s done but the damage is done too. Dropped a pretty penny to get my car fixed and re-aligned. Looking at the alignment and both front control arms compared to July, Nissan said it was actually unsafe. Thank you to the lovely city of Worcester for taking months and months to fix our road. That being said- there will be a claim put in for that one. Now if I only had all my calls and voicemails on a recording… damnit.

Tonight’s dinner I went for a spin off of these. Swapping out the chicken for shrimp. I cut up the bacon into tiny strips so it would fit around the shrimp. Just broil in a preheated oven in a HOT skillet for a 6-8 minutes until shrimp is cooked through and bacon is crispy.



T-minus 57 day’s until vacation… that means trainer time. Winter rides are much more enjoyable when you have something to watch other than “just t.v”. It certainly get’s boring after awhile!

I’ve got my trainer here and he’s pushing me pretty hard.


So- Ever heard of Apple T.V.? It’s pretty awesome. All you do is hook it up to your T.V then sign into your wifi. Then you can browse youtube, and a whole bunch of online movies and stuff. We thought it was going to be a pain in the neck to set up- but it really wasn’t! It was super simple. We have just used it for You Tube video’s so far, we love our documentaries! I’m acutally looking forward to riding the trainer just so I can watch the next one… weird?

I told you I was going to make it. ;)

We found Chorizo, and saffron at Wegmans, we had all the other ingredients at home, so all I needed was a recipe:

First- marintate the chicken, cover, and refrigerate-

  • 1 T EVOO
  • 1.5  teaspoons paprika
  • 1 t dried oregano
  • S&P to taste
  • ~1/2 pound skinless, boneless chicken breasts, cut into 2 inch pieces

Second- Make saffron rice- Heat EVOO in a large skillet over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 40 minutes. (<– just cook rice according to directions, it may vary)

  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • 1/2 t. crushed red pepper flakes
  • 1 cup uncooked brown rice (**we used brown rice vs. white rice. All the recipes I found called for white rice, but we wanted to try brown)
  • 1/2 pinch saffron threads
  • 1/2 t. parsely
  • 2 cups chicken stock
  • 1 lemon, zested

Third- Cook meat and peppers- Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.1 tablespoon olive oil

  • ~1/2 Spanish onion (white/yellow sweet), chopped
  • ~1/2 red, green, & yellow bell pepper, cut in strips
  • ~1/2 pound chorizo sausage (casing removed and crumbled or sliced thinly)
  • ~1/2 pound shrimp, peeled and deveined

Fourth- mix it all up and enjoy :)


and there’s plenty for leftover’s for tomorrow :)

He’s the best..

I love when I come home thinking I have to get dinner all ready.. and then I find this..

everything ready for dinner.. ready to go and a recipe too! O.K a dinner already prepared is good too, but hey we all gotta work ;)

We decided on a shrimp scampi last night, but wasn’t sure how I was going to make it, so to be honest I was kinda stressing. We have no wine in the house so he found a recipe without it.. and it came out really great!

I cut the butter and EVOO down a bit, and it still came out great. Next time I’ll be tossing the pasta in the garlic, then topping it with the garlic and bread crumb/parm. cheese mixture before broiling it so the pasta has more flavor.

Maple glazed sea scallops & mashed sweet potatoes

I had a dish @ The Sole Proprietor a week or so ago for my father’s birthday, and I just couldn’t stop thinking about it because it was so yummy!

So why not try and make it myself? I’ve NEVER made scallops before so I was a bit nervous. Overcook them and they’re like rubber bullets, timing is everything… and the glaze I made is super easy. I made shrimp for JB, which came out awesome too!

So first thing- make the mashed sweet potatoes.. peel and dice 3-4 small/medium sweet potatoes. Then boil for 15 minutes.

Drain and place back into hot pot.

Add in:

  • 2 t. whipped light butter
  • 1 t. light brown sugar
  • 1.5 t. pure maple syrup (or more to taste)
  • pinch of salt
  • pinch of orange zest and a squeeze of an orange (about 1/8 t.) (<–optional)

Mash it all up until smooth..

Now for the scallops & shrimp.

Season with a little S&P.. Heat up a skillet.

Add in a little canola oil and toss em’ in. Once they are in, add in 1/2 t. whipped butter and swish it around the pan. Don’t move the scallops and shrimp a lot just let them sit and caramelize.

Cook for 90 seconds, then turn & do the same thing.. add a little butter and swish it around the pan.

with about 30 seconds left on the 2nd side, add in 1-2 t. maple syrup to the pan. It will caramelize and brown quickly. Once this happens baste the scallops with the syrup and shrimp and remove from the hot pan..

Time to eat :)

Can I just tell you how GOOD the scallops were?! I’m a huge fan now.

The mashed sweet potatoes aren’t too shabby either. Another success :)

I thought it was Spring?!! But it sure does feel like Winter still! The wind and cold today I could not get myself to run outside. I was really planning on it, but I just couldn’t. So I headed to the gym for my 7 miler on the treadmill. Ave 8:35 pace.. all I have to say is thank God for HGTV and the woman in front of me dancing on her aerobic machine.. LOL. JB had a trainer ride while I was @ the gym, then after we were going to get our groceries done before date night :)
We headed out to Texas Roadhouse.. because we have had a gift card since Christmas (i know, i know!).. We got the Baby Blossom to start.. it was not so “baby”! Thing was big! a bit battery, but still good, and for my main course I got the grilled shrimp over rice with a sweet potato the size of TEXAS and some mixed veggies.. I barely ate half of it, should be good for lunch tomorrow!
Obviously we didn’t get to the Cape- too cold! once it get’s warmer we will be there all the time.. I hope!  Tomorrow taking Sly for a hike out to trout brook, then the usual Sunday stuff.

So.. Today I got an invite to run in a relay.. it’s the Reach the Beach Relay, by Courtney.. I’m thinking it would be a lot of fun!.. and a lot of miles too! Anyone ever done a relay run like this before? I’m not sure… but I’m always up for new things, and this would definitely be something new and exciting right?! :o)
