Pumpkin Poppers

Damn you Pinterest.


I saw this recipe less than a week ago… Here’s how you can make these little balls of heaven. I switched a few things with it.. so here you go! You DO NOT need a whole stick of butter to roll them in at the end, and cut back on the oil, add a little more pumpkin.

  • 1¾ c. all-purpose flour
  • 2 t. baking powder
  • 1/2 t. salt
  • 1/2 t. cinnamon
  • 1/2 t. nutmeg
  • 1/2 t. allspice
  • 1/8 t. ground cloves
  • 1/4 cup canola oil
  • 1/2 cup brown sugar
  • 1 egg
  • 1 t. vanilla extract
  • 3/4 cup pumpkin (not pumpkin pie filling)
  • ½ cup low-fat milk

For Coating

  • 3 T butter, melted
  • 1/4 c. granulated sugar
  • 2 t. cinnamon
  • 1 t. pumpkin pie spice
  1. Preheat oven to 350° and spray your mini muffin pan with nonstick cooking spray.
  2. Combine all the dry ingredients in one bowl and whisk till combined.
  3. In another bowl, mix together the remaining ingredients (oil, brown sugar, egg, vanilla, pumpkin and milk).
  4. Pour the dry ingredients into the wet and mix until just combined.
  5. Using a cookie scoop, fill mini muffin tins until full.
  6. Bake for 12-15 minutes.
  7. While Poppers are baking, melt butter on plate.
  8. In a small bowl combine your sugar and cinnamon.
  9. Let the poppers cool for a few minutes before rolling them around in the melted butter and then plunging them into sugar bowl.


They’re easy, and I’d say pretty darn good. I’m going to healthily recreate my next batch and substitute the flour and some other ingredients so stay tuned for THAT recipe! Perhaps- this weekend? Fall is in the air!


Perfect for Bike rides, and runs… and ahem- cyclocross? Yep- I’ve joined Fritz’s Cyclocross Team. I Ordered up a bike and I’m almost ready to go. Do I know what I’m doing? Not really, but I can bike, run, jump over things and go all out for an hour- so why not. It all started with a Strava comment- I was then asked to join the team. So here I am, waiting for my new CX bike, signing up for races. Excited and extremely nervous, but it’s something I’ve always secretly wanted to do! :) What’s Cyclocross you ask? Let me show you-

Lake Placid


Lake Placid was AMAZING! The mountains are where we are meant to be… no- not because JB’s Mountain Beard. The lifestyle just seems like it fits us (ahem- The Butlers) so much better. Everyone is outdoors running, biking and being active. There’s so many little shops around town and farmers markets all over to get local produce, ohhh the life. Worcester just doesn’t fit the bill… sorry Wormtown.

We arrived to LP Saturday afternoon. After 5 hours in the car the mountains were certainly nice to see! Here’s what it looked like walking out of our hotel everyday…



Checking into our room- we found these :)


from PW and Courtney! What a nice little surprise (and the little ADK chairs are the cutest things ever!) PW raced #PRO Sunday in Ironman and totally crushed it: 10th place Pro, 12th overall! We had a blast watching him. Sunday was by far the most fun day of the trip. Not only because of that, but because JB and I summited Whiteface Mountain. O.K. it wasn’t much fun riding up (OR DOWN) but to say we accomplished it, that is pretty awesome! And the beer and nacho’s were pretty good after too ;)



I paid money to suffer for an hour and a half to climb up a mountain on my bike? #cyclistproblems

It wasn’t a clear day out to get great pictures, but here we are at the TOP! (don’t mind my extremely exhausted face, JB looks like he’s ready to ride up again!)


The rest of the trip we relaxed, did some shopping, ate out at some amazing places, and rode around LP to do some sightseeing.




On the way home we stopped at the Olympic Jumping Complex for the show and ski lift. I had NO idea what to expect. We showed up about 12pm as the “show” wasn’t suppose to start until 1pm. We took our ski lift ride to the top of the jumps, then the elevator ride (30 stories!). Boy was that a sight to see!





I can’t wait to go back! I went to the City Hall today and picked up our marriage certificate! Let the name changing begin. This list of things I have to change is ENDLESS… I wonder if this MissNowMrs thing really works?! I’ll let you know ;)


4th of July wrap up

I received this text message on Wednesday as Justin and I were about to pack up and head to the Cape for the weekend… what was I in for?


Seriously- First a surprise bridal shower from my co-workers last weekend- now this? I have the best friends and family a girl could ask for! I guess I’m not the only one who can plan fast! ;) Thursday afternoon the girls and I headed out… to the top secret location- I had no idea where we were going. Anna kept throwing me for a loop, but we eventually ended up at…


They even adorned me with the “Bride to Be” tiara and sash… I kept forgetting I had it on as we were walking around Mashpee Commons. The kids were looking at me like I was nuts! We went bowling then walked around for a bit & grabbed some Fro-Yo before heading back to make some grilled pizza for dinner.


Bowling was a blast. They “let me win” ;) Here they are rockin’ the shoes- Erin, Monica and Anna ♥


Fro-Yo is ALWAYS a good idea (even before dinner) this stuff was awesome- I had to stop myself because the topping were endless, the flavors were soooooo good. It was the perfect treat after bowling :) We walked by this painting place on the way back to the car and were were saying how we should go sometime… Later that night we re-created our own painting party! Anna miraculously had all the painting supplies needed! canvases and all.

Yesterday JB and I went for a bike ride.. 40 miles to the CC canal and back- no hills makes it SO much easier, kind feels like cheating sometimes. We took our yearly picture by the bridge and I claimed a QOM… all in all a nice bike ride!

After our bike ride we headed to the beach, where it was completely mobbed, so we just hung out on the opposite side of the beach in the water for a bit before we headed back. My aunt and uncle came over for dinner with 3 of my cousins, so Dinner was a FEAST. Steak, chicken, lobster, steamers, ribs, corn, rice, salad… and to top it off?


My aunt and uncle who own Greenhills Bakery brought a tasting of their red velvet cake for JB and I to try.. to see if this is THE flavor we’ll choose for the Party in September ;)ohh the perks of having family with a bakery!

Making new side dishes-

We got MORE bacon in our CSA this past weekend- so I decided to make something with it tonight. Roasted asparagus with Bacon and onion.. yes, it was the bomb.



What have you been loving lately?


Four months later.

Finally, the weather is getting nice… I’ve been itching to get on my bike (outside)! The trainer was getting so old… I haven’t been outside on my bike in over 4 months!


Jeez- and I was only riding it twice a week… if that! Yesterday JB and I went out for a ride after a quick emergency trip to Fritz’s Bike Shop down the street. He had to pick up a new crank- thankfully, with new ownership- Fritz’s came to the rescue! They’re rebuilding inventory to make it THE go to bike shop. We were also talking to the new owner Aaron and he mentioned they’ll be starting group rides soon too! We’ll be looking forward to that. I picked up some tape while we were there- I’m going back to white to match the seat, cages ;)




We planned to do about 30 miles- I said something flat… (ha!) Let’s be honest- you just can’t do flat around here. Starting the ride with our usual Brattle street climb was a real eye opener- my legs were on fire, my throat was dry and my heart was racing. Boy I felt out of shape. Once we got going it felt so good to be out there though. I envied my endurance of last winter as we rode outside for the whole thing. 30 miles later- we were done, and my legs were done too. I’m just excited it’s time to ride again! (and my Strava obsession has begun…)

Last night we planned on taking a ride out to Greene Rd… in the pitch black. Why? to see what it’s like if we decide on that plot of land, to see if there’s lights, to see how I felt. No there’s not many lights, and I didn’t feel as creeped out as I thought I would! Thank goodness. We saw 3 deer in the road on the way back… thats something we don’t see in Worcester!

While we were out that way- we headed to The Angler for dinner. This place is the BOMB. Our dinner was amazing. I got the marinated swordfish chunks with mixed vegetables (which weren’t mushy and loaded with butter) and sweet potato fries. JB got the maple glazed salmon with garlic spinach and sweet potato fries. Honestly I would make the drive here- rather than going to the Sole in Worcester for seafood, it’s that good.


It’s Sunday. You know what that means! Time to make lunches, wash the cars, do some laundry, cut JB’s hair, prepare for dinners, and everything else! Oh yeah- Happy Easter!
