Rice Cooker and Beef n’ Broccoli

 

We eat a lot of rice.

Probably 3-4 times a week. So we made the plunge and got a rice cooker! Amazon prevails again.. found this one with great reviews:

Tonight I made Beef and Broccoli with the flank steak we got from the farmers market- remember? The marinade I’m using for the beef is as follows-

  • 1/4 t. baking soda
  • 1/4 t. white sugar
  • 1 t. cornstarch
  • 1 T. low sodium soy sauce
  • 1 T. oyster sauce
  • 2 t. water
  • 2 t. sesame oil {or canola oil}

Let it marinate for about an hour,

 

One cool thing about this rice cooker is it has a steaming basket, for veggies! How perfect- tonight I’ll be steaming the broccoli before mixing everything together. The pamphlet has steaming times for all sorts of veggies.

 

The rice cooker is easy, just put 2:1 [water:rice] in it and hit ‘cook’ and time it… so simple! no watching it boil, turning it down to a simmer, no stirring it… just let it do it’s thing ;)

So once the rice and broccoli is all cooked, keep it on the warm setting. Now sear the steak on high heat and add this to it-

  • 2 T. low sodium soy sauce
  • 1 T. light brown sugar
  • 1/2 t. minced garlic
  • 1/2 t. ground ginger
  • 2 t. oil { 1 each- canola, sesame}
  • 1/2 t. cornstarch

cook beef until its almost done to your liking..

 when the beef is almost done cooking, add in the broccoli to soak in some of the sauce..

 

serve it over your nice fluffy-brown rice, viola!
