Acorn Squash and Seeds!

I’ve always wanted to make one.. an Acorn Squash that is. They’re packed with all sorts of nutrients, vitamins and fiber. I was a little hesitant about getting it because I wasn’t sure if JB would eat it. He’s been really great about trying anything and everything- so I went for it! It wasn’t like it was super expensive, so if he didn’t like it I wouldn’t feel so bad. This monster was only $1.03 @ S&S Farms. Can’t really beat that can you?

Here’s how I made it. *preheat oven 400*

Cut it length wise.. (it’s a little hard to cut so be careful!)

scoop out the center pulp & seeds, set aside.

slice into squash carefully (about 1/4 in) This allows the glaze to seep into the squash.. then brush with orange juice.

fill baking dish with 1/4-1/2 in water, place squash cut side up, bake for 30 minutes.

when 30 minutes is just about done, to make glaze, use 1 T whipped butter, 1 T maple syrup, 1 T light brown sugar, a dash of cinnamon, and a dash of cayenne pepper. whisk over heat for a minute..

drain off liquid from squash before you brush the maple glaze onto squash, then add in some chopped walnuts or pine nuts (or whatever nut you like!) and bake for another 40 minutes uncovered.. the nuts will get toasted, the glaze will get thick and the squash will get tender.. *heaven*

The slicing allows for easy eating too, just scoop it out like chunks.. it’s sweet, but not overpowering- JB APPROVED :)

After a run with Sly yesterday I saw a package on the doorstep.. it’s my BOOTS! EMS prevails again! I ripped open the box, and tried them on- they fit great! So soft, cushy, and warm! The treads are pretty aggressive too, no slipping for me! ..I said slipping, not tripping- because we all know Ill be tripping ;)

and the craziest part about these winter boots it that they’re lighter than my Hiking boots!!

Oh right.. remember I told you to set those Acorn Squash seeds aside? Remove the seeds from the pulp, rinse them in hot water, dry them off..

drizzle them with some canola oil, sprinkle with a little bit of salt and make them with the squash @ 400 for about 15 min, shaking and turning every 3-4 minutes.  When they are golden brown season with your favorite spices- I use cayenne (of course) and garlic powder..

They taste exactly like pumpkin seeds! a nice little snack :)

So last night WAS Halloween but due to the storm the town moved the trick-or-treating day to Thursday.. LAME!!! I was all ready; I had my halloween shirt on, candy bowl ready to go, and I went to the computer to google what time the kids would start coming.. and then I saw they changed the date! I can’t imagine that we will get a lot of kids now, I hear a lot of people went to neighboring towns where they were still having it. I’m really bummed because I wanted to see all the costumes! Speaking of costumes, I got and e-mail from JB’s mom with a bunch of dog costumes.. next year I want to get this costume for Sly!.. whactcha think?
