That’s what you had for dinner?

I’ve always wanted some Keen sandals. And now is the time to buy! They were on sale @ New England Backpacker for 58 bucks! I’m in love, they’re more supportive than flip flops and frankly I think way cooler :)~

After a dentist appointment this morning, and Physical Therapy, I was planning for a bike ride with my new Hammer Jersey and socks!

..oh and Heed! Can you tell I really like Hammer products? :) Did a pretty easy 22 miles, averaged 15.2 MPH. HR 142. My knee was a little troublesome at some points, but I pedaled through.

So dinner last night was kinda random. Wasn’t very hungry, and JB was out mountain biking, so I made this rather odd but yummy mixture up: cottage cheese, strawberry applesauce with strawberries. my new go to snack/meal! I know you’re probably thinking, what kind of dinner is that?! But try it- it’s super filling! I also got regular applesauce to top with apples, and pear applesauce to top with pears.. you get the picture?

YUM.


Off to bed very very soon. Work 3a-3p tomorrow in the good old E.R.. then it’s off to the Cape for the Holiday Weekend, the last “Official” weekend of the Summer! BOOOO. Fall is my 2nd favorite season though, so it’s not THAT bad. Pumpkin beer anyone?

I’ve finally Decided! to go with the Noyz by Rudy Project. They’re going to look like this.. but with a charcoal Rx lenses.. and all white frame :)

OoOo… I just can’t wait til they come in.. probably next week, I’m hoping :)

Today I had a brutal 8 hours of class. GROSS! we are going to all electronic charting at work. It’s going to be quite the learning curve for everyone, not sure how it’ll be when it’s crazy busy, but we’ll see. So today we got an intro to all the stuff.. and I could barely sit still!

So you can imagine what I did once I got out??

I ran! just 21 minutes.. but feeling better and better, knee’s are still feeling good.. a little sore, but still 99.9% better than before! :)

Got home from my run, and opened up the mailbox.. and got another package from Pete! He sent me a t-shirt from Iraq with his regiment emblem on it.. very awesome :) Definately wearing this tomorrow @ class (yes class again! but only 4 hours this time, thank goodness!)

After going to order my sunglasses, JB and I stopped at CHIPOTLE for some eats.. some yummy yummy eats…

Inside is pure bliss.. I could barely contain myself to take this picture because I was so hungry!

just looks like a blob of dough.. but it’s what’s inside that makes it so delish, if you have never had Chipotle, then I could recommend going, either today, tomorrow, better yet- RIGHT NOW!I got the chicken burrito with brown rice, black beans, corn, medium salsa, guacamole, lettuce, and a little cheese.. As for the rest of the night… waiting for Intervention to come on.. I love Monday night T.V! what’s your favorite T.V. Night

Crock Pot sunday!

Went for a quick run in the HURRICANE yesterday!.. it wasn’t much of anything.. just a little rain! Did a whole 17 minutes and the knee’s felt good, just weak from not running! But I can now say I ran in a Hurricane.. or I guess it’s Tropical Storm Irene! haha.. what a joke- I’m just happy we didn’t lose power.. because I did just do groceries! Post “Hurricane” run…

Sunday I had planned Crock Pot Sunday!.. BEEF BARLEY STEW:

O.K. so I left JB up to this one.. I got the ingredients and he had to “cook it” :) And our “I cook”.. “you clean” rule.. I got these puppies.. so convenient hu?! Nice and easy Clean up for me!

So.. first brown your stew meat in a skillet with a little butter until browned (not fully cooked)

also saute one large onion in the same pan.. then deglaze the pan with a little beef broth to get all the goodness off the bottom..

add 6 c. low sodium beef stock or broth to crock pot.. add in browned meat, onion, also 3 chopped red potatoes, 2 stalks of chopped celery, 2 cups of chopped carrots, 2 bay leaves, 1 T. worcestershire sauce, 1 t. pepper, 1/2 t. onion, garlic powder, basil and parsley. Cook on low for 9 hours total. When there is one hour left.. add 3/4 c. Barley to the stew.. right before serving- top with fresh parsley and serve in a bread bowl.. or just a reagular bowl.. it will still be amazing :)

If you like it a little thicker.. remove some liquid into a small bowl.. add some cornstarch, mix well then add into crockpot!

She told me to run… every other day! “Start with 10 minutes. then add 5 minutes each time, see how you feel”  I’ve never been so happy to hear someone tell me to RUN! So tomorrow after work I’m gonna go for a run outside! mmhmm.. check this out-

After P.T. went to Atchu Opticians today, where I got my glasses.. and whatta ya know- they have Rudy Project and Oakleys there! I went to try on a few and make up my mind.. and what happened? I’m more confused now! I was playing with the idea of getting the Rudy Project Rydon’s or Rydon 2′s.. buuuuut they just weren’t what I thought, contrary to all the hype on the bike forums I have been reading. I tried on a pair of the R.P NOYZ which I hadn’t even been looking at and now I love them.. Hmmm.. decisions decisions! I’ve narrowed it down to the NOYZ by R.P. or the Flak Jacket’s XLJ by Oakley. I swear I’ll decide soon :)

So I went for an early (see the moon?) bike ride this morning with J.B. well.. I rode along with him half way to his work, and then I turned around in the center of Sterling and headed back home! 24 miles Ave. HR 143. Knee’s felt great.. what DIDN’T feel great was the BEE that flew into my shirt! Damn thing almost made me crash!

Once I got home from all my stuff I had to do I made some long overdue Cookies for Kabul [C4K] and sent out a care package to Dave and Pete.. ohh yes- and I guess I should prepare for the HURRICANE!.. hmm.. I’ll take in the deck furniture I guess. haha

M&M  and Nut Cookies:

Cream together 1 c. butter flavor shortening, 1 c. light brown sugar, 1/2 c. sugar. Once combined add in 2 eggs and 1 t. vanilla extract. slowly add 2 1/4 c. flour, 1 t. salt, 1 t. baking soda. Mix well.. then add 1 medium bag of m&m’s, 1/3 c. chopped walnuts, and 1/3 c. coconut.. bake on un-greased cookie sheet for 10 minutes @ 375, watch closely!

So i’ve been looking at how to personalize my blog.. and made this for my header and sort of “theme logo” whatcha think? :) with the help of my techie bro, it’ll be up soon!

“why do you eat so healthy?”

I often get asked why do I eat so healthy? & how much time does it take to prepare my lunch bag? and my answer is.. it’s cheaper to pack my own, quicker than the cafeteria, and I like to eat more healthy stuff than less unhealthy stuff! Here is a peek at my typical lunch bag for a 12 hour work day.. I usually get to eat it all, but there are days where I come home and it hasn’t been touched! So there’s breakfast which I have around 530/6am: plain Chobani with 2 T. flax seed and mixed fruit. @ around 9:30/10am I’ll have some more fruit like watermelon or an apple. Then lunch is 1145/12-ish, is my usual salad with some protein and tons of water. Then around 1:30 I’ll have another something like carrots and hummus. I always usually make my lunches all at once, and then the night before throw everything in my bag in the fridge (obviously I’m not getting all this ready @2am!). It’s easier, cheaper and healthier! :)

Give me all the grief you want about my lunch bag.. but I never go hungry! Today I had a meeting for work all day. It was for the Planetree mission that is trying to take off at UMASS. It was really a great meeting, opened the doors for some great opportunities and.. another committee to join :) We’ll see how this goes. I’m all for patient-centered care, so I wonder how this is going to fly in the ER. They put on a pretty awesome lunch too, catered by the Struck, I had the Mediterranean veggi sandwich.. it was full of grilled eggplant, summer squash, roasted red peppers, lettuce, tomatoes.. and smeared with hummus.. soooo good!

Tonight for dinner: Spaghetti Carbonara NOM. NOM. NOM…

So.. about this HURRICANE! it’s suppose to hit this weekend.. and I’m working :( Suppose to hit hard Sunday afternoon, right when I get out! Just great. Tomorrow is a day off to prepare! going out to buy a few batteries for the big flashlight, and gotta mow the lawn (maybe!), and get a package out to Dave and Pete! and bake some cookies?… Yep.. stay tuned for those!
