Did groceries yesterday and they took forever because JB and I found ourselves scanning everything on the shelves and consulting each other with the new FOODUCATEapp.. did you get it yet? Well, after a long time shopping, we made it home, and lunch was way late but I had a hankering for a big salad after buying just about every veggie there!
and a whole bunch of fruit for the week too– mmmm.. cherries
We also made a special stop @ Ed Hyder’s Mediterranean Market place to get some ingedients for some bars we’ve been dying to make. Found most of the stuff @ the Nutrition Source, but couldnt find instant Espresso Powder for the life of me, but Ed Hyder’s had it!
If you have never been to Ed Hyder’s it’s a really cute little market with fresh meats, homemade hummus, tons of cheeses, wine etc.. don’t let the outside fool you!
Behind the counter they have a TON.. I mean A TON of spices, ones I have never heard of- so if you ever see a recipe that calls for an exotic spice- go here!
So here we go, from Bicyling Magazine:
-Dissolve espresso powder in 1/3 c boiling water, set aside to cool.
- In food processor- add dates, figs, walnuts, hempseed, pulse until blended.
-Add in everything and process until clumps form.
-form in baking sheet, about 1/2 in. thick.. freeze 30 minutes or longer, cut up and enjoy!
makes 10 bars: each bar: 177 cal, 7g fat, 30g carb, 5g fiber, 5g protein, 15mg caffeine.
I found the bars to be little orangy.. not my favorite thing. but JB loves em- next time I think we might try coconut in them or a different nut, and omit the orange, or just add a tiny little bit!
PS- I have been trying to think of a new Web Site domain name.. something without “blogspot”… i’m going to .com but I’m having some trouble thinking of one and the ones I think of are already taken!.. Any suggestions?
