Cookies 4 Kabul: C4K
I Made some more cookies today for my Brother Dave and co-worker Pete overseas today.. I made some chocolate crinkle cookies. I had to cut out the butter as it is the number one ingredient to go bad 1st, so I used some Vegetable shortening, Crisco.. I know- it's trans fat free, but still.
- 1 stick Crisco vegetable shortening
- 1 t. vanilla extract
- 1 1/4 c brown sugar
Then add in:
- 2 large eggs until lightly beaten
- 2 cups white flour
- 6 T. unsweetened cocoa powder
- 1/2 t. salt
- 1/4 t. baking soda
Add dry ingredients to mixer until combined
then add in 1/2 c semisweet chocolate chips.
Cover and chill for 2-3 hours.Roll dough into 1 inch balls, roll in sugar then powder sugar.
bake @ 375 for 9 minutes..
After getting out of work @ 11a today, took the the streets did 5 miles.. as I was running a along the usual route I had some company for a little while.. Courtney's husband Pat! Nice to run with someone for a change.. without 4 legs that is. Decided to do a little split run today- 5 miles then 3 miles later in the day, and that's just what I did.
Felt pretty good, starting the 2nd run my legs were a little tired but once I got warmed up it wasn't so bad.
run 1: ave. 8:54 zone 4
run 2: ave 9:01 zone 3.
Oh ya- Got a call from HammerNutrition while I was baking the cookies.. they just wanted to tell me that my order shipped.. woohoo! and better yet- got a e-mail packing slip of what's coming along with what I ordered.. and they send a whole bunch of free stuff too! can't wait to get that package! Hammer is the bee's knee's!
Work tomorrow 3a-3p, and then it's out with the relay group! I'm getting nervous for this relay run!
