"Joe’s Cafe"

Ugh- headache woke me up @ 6am.. took a few Tylenol and tried to fall back asleep, got a little more time of shut eye- then got up, had breakfast and headed to the gym! Ran 3 miles, slow run- averaged 9:00, zone 2. By the time I was warmed up it was time to end! Kind of rushing around I hurried downstairs and swam for about 15 minutes. That’s all the time I allotted, hey it’s better than nothing! Man- swimming sucks, It’s just soooo boring. At least when you bike you’re able to see what’s going on, and running you can listen to music, all you do when you swim is stare at a black line at the bottom of the pool and hear your bubbles of breathing blow past your ears… eesh. Anyways, it’s done. Tomorrow I’ll do my “long” run since I’m working this weekend and definitely won’t feel like running an hour after 12 hours of work!

So went into work today an extra 4 hours: 11a-3p. I was in Pediatrics for a change.. it was nice! not busy really- compared to the adult pods. Had really great kids too, and parents were great- for a change! After work- made a trip to Trader Joe’sto pick up a few things.. I always like their “Joe’s cafe”. They display new items and treats to try- things you may not usually buy suddenly become a staple every time you go. Today they had a low fat battered shrimp atop a tortilla chip with pineapple salsa.. SO GOOD! my favorite was the pineapple salsa- so going to give it a whirl. Figure I could use it almost like a salad dressing somehow and for dipping homemade plain wheat pita chips? I recommend always trying what they have out! Sly is always around where there’s food!..

I saw a recipe for baked chick peas the other day, can’t remember where, but I gave them a whirl today- and MAN THEY ARE AWESOME!just to munch on or atop salads.

Chick Pea Poppers:
1 can low sodium chick peas, drained and rinsed then tossed in..
1 t. EVOO then..
Season with: chili powder, onion powder, garlic powder, parsley and pepper (or whatever seasonings you like really!)
Bake on tin foil for 35 minutes until a little crispy.. and that’s it
