Peanut Butter Oatmeal Cookies..

Cookie Time! Not too sweet, not too dense.. just prefect..
Peanut Butter Oatmeal Cookies: Preheat oven 350
1 Egg
1/3 c. brown sugar
1/3 c. Peanut butter
3 T. Unsweetened Apple Sauce
2 T Honey
3/4 t. Vanilla
3/4 t. Baking soda
1 1/4 c. Rolled oats
1/3 c. Whole Wheat flour
Mix first 7 ingredients, then slowly add in oats and flour until dough is formed. Makes 12 cookies: bake for 8-10 minutes and enjoy!

I’m Melting!

The Snow piles are finally melting! I can actually see around corners now when driving.. Spring is coming! :o) The first day of spring is just a few weeks away- cannot wait! It’ll be a sloppy start but cannot wait to get outside! Yesterday was very nice out 50-ish with the sun. I went outside for my “long” run Saturdays. Did 6.5 mi @ 8:46 pace. Felt really good- other than wet feet! Towards the end, my hip flexor’s were a little sore. Gotta start working them more- stretching and such.
After my run- and JB on the bike, we ate a quick lunch (pb and banana protein smoothie!!- big surprise hu?) then headed to visit JB’s Memere @ Rehab s/p her stroke :( She’s doing O.K. but consistency will be key- hard work and patience. I told her about my stroke last January but nothing can compare to this. Yes- MY stroke. I’m totally fine, just have to take Coumadin now though which sucks! Thoughts and prayers flying her way for a quick recovery!

Then we headed to Arlington to pick up my bike @ Quad Cycles! They had to fix a piece of the rear derailleur. Works great now- excited to take it out! Since we were out that way- we took a ride to L.L.Bean. I exchanged my “wicked good slipper’s” for some new ones and a jacket I have had since middle school was just beat up, so I brought that and they gave me a nice store credit! Gotta love a lifetime guarantee :) Wooohoo!

Our stomach was grumbling and we were STARVING. Chinese food tonight! Saturday is a cheat night- so we were in the mood for some Chinese, we plugged it into our GPS, and off to Sichuan Garden II. I got a spicy chicken dish with garlic sauce, JB got a spicy chicken dish in a capsicum sauce.. and man was he sweatin’! For apps we got chicken wings and Won ton soup.. sooo original right? Well, we were the only ones that didn’t get chop sticks in the room we were in. Everyone else did.. maybe because we were the only Americans! Hahaha, ohh well- I guess they didn’t think we knew how to use them.
We packaged up our leftover’s and finally headed home- on sodium overload the thirst started to hit.. Once we got home we chugged some water.. AHHHH

Today is the usual Sunday stuff. Went to do groceries and errands. Lunch today I decided to make leftover won ton wraps with coleslaw and duck sauce..

Preheat oven 400- Saute some coleslaw with the leftover chicken.. once wilted, take a won ton wrapper, fill in the middle, roll and place on cookie sheet. Make as many as you want, bake for 10 min and enjoy! I dipped mine in a little sweet and sour duck sauce. Soo good!

Making some more deodorant today too, and chap stick! So the new process for the deodorant, instead of melting it and pouring it into the container. The key is making it into a paste (micro for a few seconds at a time) then just smushing it into the container, refrigerate until hard. The mixture is much more even throughout. (before all the baking soda would sink to the bottom and oil to the top). Sooo- new RECIPE: (for all those wanting to make your own deodorant ;o) …5 T coconut oil, 1/4 c. baking soda, 1/4 c. cornstarch. and Essential oil if you want- 40 drops or so).

The money saving is crazy- one of our chap stick’s probably cost us a total of .15 cents! (1 Lb beeswax: $9.97, $14.00 EVOO, $12.25 Coconut Oil)- easily can make 200 chap sticks) and for the deodorant, each one we make costs about $1.00. Now that’s being green!
