Crock Pot Sundays..

Work today was even harder to get up for after a week of vacation!.. and the fact I could still hear the wing whipping outside.. BRRRR. The day was busy, as usual right? Nothing new there- admitted patients with nowhere to go but to sit and wait… and wait.. and wait. It’s sad when you take report at 3am on a patient, and then the same nurse you got report from you give them report of the same patient.. SAD.
I had something to look forward to when I got home though.. Crock Pot Sundays! JB was home today so he was in charge of dinner. We decided to make some fall off the bone chicken wings.. and that’s just what they were! Tender and juicy, no need to eat it like a real wing.. just the way I like it. I’m usually NOT a fan of eating things off a bone, but these are an exception!..

JB’s Chicken Wings:
2 packages of wings and legs
1/3 c. reduced sodium soy sauce
1/2 c. water
1 T. honey
1 t. liquid smoke
2 t. minced ginger
1/2 t. pepper
1 t. garlic powder

Bake wings bare 1.5 hr @ 325 on rack, then place in crock pot with all the above ingredients, cook on low for 4.5 hours, turning half way through..

Sunday is also a “day off” so that makes Sunday that much sweeter.. at least in the winter anyways. Tomorrow is a swim, run and core work.. o.k. back on track tomorrow!
