Slow and Steady..

Woke up this morning- with a headache :o/ How am I going to ride 2 hours this morning if I had a headache I thought.. after some breakfast and my Teeccino- it was gone.. thank goodness! So I headed upstairs and rode for a good 2 hours. Did 30 miles, and kept my HR (ave. 145) in zone 3. I attempted to read my Triathlete magazine, but it was a bit difficult- however this article made me smile:
MY CAMELOT by Bob Babbitt:
It doesn’t matter if you’re not very good: Actually, being slow is important. Otherwise, how would the fast guys and gals ever know how awesome they really are? They have to be way in front of somebody to feel good about themselves and impress the world. That’s where people like me come it. You’re welcome, fast guys.” I thought this was great- how true is that?
Racing allows you to create your own reality: In my mind, nobody ever passes me on race day. I just decide beforehand that anyone who passes is actually part of a relay team, even if they’re not. For some of us, denial is a good thing.” Hahaha

So after the ride, I had my PB AND BANANA smoothie- then headed out to do some errands.. and get my haircut! No backing down.. I love it! feels much lighter but she kept the length which is what i wanted.. What do you think?..

What’s for Dinner tonight? I used leftover rotisserie Chicken from last night.. after making some pesto chicken panini- we had plenty of chopped chicken to make a stir fry.

For the rice, instead of just plain brown rice, I made a garlic & cumin infused long grain brown rice. Simply, chop up 4 cloves of garlic, saute in a pan with some EVOO for 1 minute, then add 2 c. of water – return to boil, season with 1/4 t cumin and black pepper, then add one cup of rice, return to boil then reduce heat to simmer and cover for 30 minutes (or until all liquid is absorbed)…meanwhile..

Chop up some broccollini- including some stem, one medium white onion, 8 baby carrots (slivered) Let that mixture cook for 10-15 min, until tender (but not mushy!) once tender, add in 1/4 t. ground ginger, 2 T soy sauce, 1 T hot and spicy szechuan sauce, 1/2 t garlic powder. Mix in chopped rotisserie chicken pieces to heat through. Serve chicken veggie mixture over rice.. sooooo good and soooo easy!

they came out great!

The Whole Wheat Pita chips came out yummy! and so easy to make.
Preheat oven 375
for 4-5 medium size pita pockets.. cut into triangles-
1/4 c EVOO
1/8 t. each : red pepper flakes, chili powder, pepper, salt, fresh chopped garlic..

mix together, place pita’s on grate, brush seasoned oil on pita triangles (both sides if you like).. bake for 10-13 minutes until lightly browned. let cool and enjoy with the homemade Hummus :o)

What’s up for the week? Well tomorrow- after a 2 hour bike ride- I’m thinking about getting my hair cut.. yes at an actual beauty salon. NOT having JB cut it this time. I’m feeling like layer’s might work cuz my hair is getting very long. I really want it to look good- so we’ll see how it goes!.. i just hope i don’t wimp out… I’ll post a picture tomorrow when I do, then I will have to do it!

Tuesday JB and I are planning on going to the Mountain for some snowboarding- seeing as though all last week was school vacation week- so our passes restrict us from going! And a 3 mile run with a swim.

Wednesday working & a 4 mile run with core work. Thursday- an hour bike ride after work.  Friday a 3 mile run & core work, then bringing my Jamis to Quad Cycles for a complete tune up, hopefully to fix my shifting!

What’s do you have planned this week? anything exciting?

Now That’s good Sushi!

So last night went to BABA on Park ave. in Worcester.. Probably THE BEST SUSHII have ever had. We got a few different rolls and split them.. and they were all awesome. I can’t wait to have my leftover’s for lunch today!

Sunday! Sunday!… while JB slept in.. I decided to get all our Sunday chores done so we can enjoy the day! Meatballs are made, lunches are all set, trash is bagged, dishwasher running and laundry is going! Going to try and make some Baked Whole Wheat pita chips today to enjoy with the homemade hummus… check back later to see how they came out!

So update on the deodorant.. it works awesome! Smells amazing and glides right on (thanks to the coconut oil) Tea Tree Coconut scent is refreshing but not overpowering. Making your own deodorant is not only cost effective but non-toxic too.

Today is also and off workout day.. just doing some reading on Lactate threshold and how to improve endurance on USAT.com

green tip. Try using fabric for wrapping gifts. Inexpensive remnants can be bought for any season or occasion. Tie the fabric with colored yarn.. then it’s theirs to re-use!

Sunny Saturday

Forecast today was a high of 30 degrees… to run outside or go to the gym.. hmm… OUTSIDE IT IS! Did 5 miles, felt great today- dodging puddles, ice patches and cars.. but other than that it was great! Average pace 8:43. After such a great run- I decided to get my nails done..

…Looks pretty good hu? Well- I did them myself! I guess you could say that’s another secret talent of mine :)

So here’s the deal- JB and I are in the market for an organic deodorant, one without aluminum, parabens and tons of chemicals! We tried Bubble and Bee pit putty- works O.K. but not too good. Better for me than JB. I told him to shave his pits then it might work better! you can guess what he said. So he started to research.. (his middle name) and what did he come up with? “LET’S MAKE OUR OWN!” Oh dear lord I thought.. how the heck will we do that? But after watching a few video’s on YOUTUBE.. we found that it’s not so hard! but will it work?
We ventured out to find our ingredients. headed to the Living Earth on Chandler street, and found what we needed. Coconut Oil and tons of essential oils to choose from. We got Tea Tree Oil because it has antiseptic and antibacterial properties. Back to the house we went to concoct our very own Homemade Deoderant..

mix together:
5 T. coconut oil, melted in microwave for 30-45 seconds
1/4 c baking soda
1/4 c corn starch
40 drops of tea tree oil (or whatever essential oil scent you like) or none if you like coconut!

Now get an old deodorant stick, remove all the remaining stuff, wash it out.. and pour in the deodorant mixture, refrigerate for an hour and a half.. looks funny- but let’s see if it works! check back tomorrow for the results.

As for now I’m off to BABA SUSHI for a sushi dinner date with my girl EJ.
