very good! so tender and juicy.. the only thing I would do different would be to add the veggies in later so they’re not so mushy.. but they were still yummy!

Went snowshoeing again today with two high school girlfriends.. had a blast! Great to catch up, hope it won’t be another year until we hang out again!. Then went to the gym, ran 4 miles. Working 3p-11p today.. uh- had to switch to get Wed. off. Haven’t work 3-11 in FOREVER!! we’ll see how it goes (i just hope I’m not in pediatrics!)

Crock Pot Sunday’s..

Snowshoeing was on the agenda today!.. after an egg n’ fruit breakfast..
JB, Sly and I headed out to Trout Brook for some snowshoeing.. We wanted to bring Sly- hoping the trail would be a little packed so he wouldn’t be lost in the snow! He was leading the way as usual. Once we got home we got our crock pot dinner ready..

Greek Chicken and Rice
Brown chicken thighs in a pan with some Canola Oil. Once done, place in a non-stick sprayed crock pot with a bed of green peppers (1 large) and 2 Large chopped onions. arrange the chicken skin side up on top on pepper and onions then sprinkle with 1 T. oregano, 1/2 t. rosemary, 1/2 t. garlic powder , 1/4 pepper and 1/4 salt (or less).. Cook on High 4 Hours until done, going to serve over Rice and top with feta.. mmmm can’t wait!
green tip. Have a bunch of old stuff laying around the house? Consider selling the items on Ebay & donating all proceeds to your favorite charity.. No need to waste, one man’s trash is another man’s treasure!

Waist Deep..

Stress test went fine the other day. They could tell I was an athlete.. just chillin’ HR 53 BP:86/62.. normal for me.. alarming for others! So I started the test and usually the norm is to go 5-10 min to get to your max HR. They wanted my HR to get to 165 (no big deal right?) So I got going, after 15 minutes of a decent incline and faster and faster treadmill- the attending doctor came in and asked me what the deal is?.. I told him I work out, so he said go as long as I can.. That’s what I did. So I kept awkwardly running, having to hold onto the safety bar, EKG wires attached and the tech taking my blood pressure all at the same time. Went for a good 17 and a half minutes, got the HR to 174.. pretty impressive they said! eh- it was ok ..could have gone longer but they were happy with that. No chest pain which was awesome and no EKG changes :) Immediately after they lie you down on a stretcher to take a continuous HR and BP’s.. HR went from 174 to under 100 in less than 2 minutes. A-OK in my book! As they told me to take it easy the rest of the day.. Little did they know After I left I went to the gym and did some “more” intervals on the treadmill.

OK so check out the amount of snow we have so far.. suppose to get some more next week too! yikes! Where are we going to put it? Took Sly for a walk yesterday and he loved it.. minus getting stuck a few times in the deep parts, but other that that, we never knew he was such a Husky!..

stress test?

Worked 3a-3p today.. dragged a$$ all day- not sure why, but was just NOT feelin’ it. Some days I just get up and go, go, go, but there’s always one in a few where I know it’s going to be a loooooong day, and yes- today was one of them. Had trouble’s with pharmacy all day (nothing new there!), chasing doctors around, just an all around annoying day really. Got home plopped on the couch with my apple (mmm APPLES!) and watched the weather. Was suppose to run intervals today but I’m swapping.. Thursday is usually my day off from working out but since I only have work 3a-7a then a stress test and another appointment after that… I figured I’ll save my workout for my day “off”. You read right… a treadmill stress test. we’ll see how high I can get my HR.. any guesses? I’ll be sure to let ya know after. hopefully don’t have that darn chest pain again during the test (..which is why I’m having it. ugh)

Whats for dinner tonight? Baked Lemon pepper& garlic Salmon
Preheat cast iron skillet in oven to 350.. meanwhile chop up 3 cloves of garlic:
Once skillet and oven is heated, place 1 T of butter into skillet with 1 t of lemon juice, place salmon in skillet, skin side down, cover with a little drizzle of lemon juice, butter from pan, sprinkle of pepper and dill and chopped garlic, bake for 16-17 minutes until flaky..

Thai Basil Noodles with Shrimp

Headed up to the Mountain this morning.. conditions were great! we got a few inches of fresh snow so the slopes were covered with fresh powder.. however the wind chill was sooo cold.. totally worth it though. Gym after boarding consisted of an Hour bike ride.. watching a man with a sweet rat tail.. God I love people watching. Another one I found amusing was a woman walking around the tiny track.. texting or doing something on her phone the whole time.. interesting? work tomorrow 3-3 tomorrow.. bed early tonight! after this dish:

what’s for dinner tonight? Thai Basil noodles with “mini shrimpies”

Basil pesto sauce: combine in food processor until mixed to paste-
1- 2.5 oz. Pkg basil
2 T sesame seeds
5 Garlic cloves
3 Hot chili’s
2.5 t fish sauce
2.5 t lime juice
3-4 T. canola or EVOO

cook 1 Pkg. Soba noodles to directions, drain then place back in pot, add in Basil paste, 2 cups of mini shrimps (cooked, de-veined and thawed), mix well and serve. (May need to drizzle with EVOO @ end if too dry) *Top with Peanuts and pepper*
